El Salvador Las Ninfas Pacamara is a micro-lot coffee grown exclusively by Ricardo Valdivieso. It is grown in high elevation volcanic soil on the Las Ninfas farm, which has been in their family since the 1800’s.
Sr. Valdivieso and his daughter Monica also own Santa Leticia farm, where they run a hotel and restaurant along with the coffee plantation. You can find their website here.
This is a Pacamara coffee, which is a hybrid of Maragogype and Pacas that was created by the Salvadoran Institute of Coffee Research (ISIC). This is fully washed, and has the big beans that you would expect of a Maragogype blend.
In the cup this coffee is sweet with apricot flavors and a creamy finish. Delicious.
We’ve roasted this coffee light, and it tastes sweet, with notes of caramel and a tart finish. Enjoy.
