Monsooned Malabar

This Indian coffee is harvested, processed, and then left in an open sided warehouse to be exposed to the monsoon winds. The beans actually absorb the moisture from the monsoons, and grow in size. The swollen white coffee is placed in warehouses where it is constantly moved until the moisture is reduced to 11 percent. This creates a mellow bean, with earthy, deep flavors–reminiscent of when coffee used to be carried on sailing ships, and was exposed to the sea air for months on end.

It brews a sweet cup of coffee, and pulls a beautiful shot of espresso.  Delicious and smooth.
