“Possibly the coolest name ever!” – Roaster Dave.
But the name isn’t the only cool thing about this coffee. Honduras Liquidambar Yellow Honey is a single farm micro-lot. Oftentimes beans are community blends, coming from several farms. Although quality control is generally exceptional (weeding out any discrepancies amongst the beans), it’s exciting to have a product entirely from one farm.
Honey Processing tends to bring forth the fruity, pulpy, and jammy flavors of a coffee. Look for a burnt caramel sweetness to the beans. The Honey Process retains certain desirable characteristics of a full Natural Coffee: heavy body, sweet fruitiness with lower acidity, deep chocolate notes. However, it speeds the drying process, reducing risks of mold and other defects.
Roberto Rene Gonzalez runs this family farm, Finca Liquidambar. He’s working on getting 19 acres of his farm formally recognized as a biological reserve.
