This coffee comes from small family farms that come together around Cooperativa Agropecuaria Cafetalera san José Ltda. (COCASJOL), in the department of Santa Barbara, Honduras. According to our broker:
“COCASJOL works with producers who use organic practices to manage their land, which acts an important protective buffer for the Cerro de Cantiles watershed. In addition to training on best organic practices, COCASJOL also maintains its own cupping lab to manage quality control, which has helped improve quality, increase earnings from coffee sales, and strengthen producer livelihoods. This is hand sorted coffee, grown at high elevation (SHG = strictly high grown). We’ve roasted it light, and the beans have a deep chocolate scent and in the cup it tastes of toasted pecans with a nice acidity that dances on your tongue. Delicious.
