This Sumatra is sourced from three coffee estates near the shores of Lake Toba in the province of North Sumatra. The lake occupies the caldera of a supervolcano – which means excellent soil quality for the region’s coffee crops. (Side anecdote: Lake Toba is the site of the largest known explosive eruption on Earth in the last 25 million years!). Yudi Putra, a family-owned export company, operates the local mill and collaborates with farmers so that coffee can be shipped internationally (to places like Carolines!).
Sumatra Lake Toba Samosir is a honey processed coffee, which while common in El Salvador and Costa Rica, is rarely seen in Indonesia. Honey process is between a dry/natural and a wet process, in that the pulp is removed before drying, but the mucilage is left intact. This concentrates the sugars of the mucilage and gives the dried beans a sticky feel (like honey).
