Aged Sumatra

This is a very unusual bean, that we love to carry whenever we are able to procure it.  It is not old, but instead, like an aged cheese, it is intentionally left to “cure.”  The idea is that it mimics the taste of coffee that came on sailing ships years ago, which were exposed to the sea air for months at a time.

Now it is aged at least three years in a climate-controlled warehouse for a similar effect. Aged Sumatra is full-bodied with a pronounced earthiness and it is fruitier than other Indonesian beans. It is a complex flavor and the aroma is enticing and unique.
