Organic Timor-Leste Ermera Letefoho

This is a beautiful fully washed coffee from the Indonesian island of Timor-Leste.  It comes from a co-op of farmers from Cafe Brisa Serena (see their website here), who work together with a Japanese NGO to improve the quality of the coffee and the lives of the farmers.  They hand pick only the ripe cherries, and carefully sort them before processing and drying on raised beds.  You can read a producer interview here. 

The end result is a high quality certified organic bean, that yields a delicious cup.  The aroma is earthy, and you taste that when you drink, along with tones of apricot and meyer lemon.  Delicious.
