Last weekend was all about the lovely bride and groom pictured above. Our manager Becky eloped three weeks ago, and we had a celebration for her and Dave on Saturday. All their nieces wanted to be flower girls, so they kindly got them dresses and crowns for the occasion. Those were happy little girls!

Congratulations to the both of you, and welcome to the family Dave! We’ve had a great week with family in town, and my kids have been off camping with their cousins. The silence in our home is beautiful–but then, so are the kids voices. It’s nice to have a mix.

This week our coffee comes from Finca San Francisco, a farm in the Apanceca region of western El Salvador. This coffee is grown and produced by Jose Antonio Salaverria. The laguna las ranas means pond or lagoon frogs, named for the thousands of frogs at the highest point on the farm.

Laguna las Ranas is picked at the highest elevations of Finca San Francisco, which makes for a denser bean, less quantity and higher quality. This is volcanic soil, which coffee loves, and the beans are all bourbon or bourbon varietal arabica. One of the unique things about this coffee is that it is processed in house. The Salaverria family founded JASAL, a coffee mill dedicated to quality and sustainability.

This is a honey coffee, like the Brazilian Rose that we featured a few weeks ago. It is also called a pulped natural, and it is in between the wet and dry process of coffee. The mucilage is left intact while the coffee is being dried, and this gives it a sweet flavor and the “honey” name. This coffee cupped beautifully, and we love it roasted. It has caramel and light stone fruit tones, with a lingering nutty finish.
