This is a remarkable Ethiopian bean from the birthplace of coffee. It comes from the high altitude southern region of the Gedeo Zone, from indigenous heirloom beans.
Before we ever roasted this coffee, when we first opened the sack of green beans, we noted a strong berry aroma. This comes from the processing–the term “natural” refers to the fact that it is dry-processed, or dried with the fruit still intact. This process is what gives it such a strong fruit flavor.
The berry tones still come through in the cup, and it tastes of blueberry and light citrus, with a high acidity. Delicious.
